We harvest olives from Wineries, Grape Growers and Estate Properties in the Napa Valley. I work closely with the viticulturists to cultivate the olive trees throughout the growing season. When time come for harvest my team picks and I process the olives into premium olive oil.
With a lifetime of experience working in the Food and Wine industry. it all started by working at restaurants in my hometown Buffalo NY. I moved to Napa Valley over 20 years ago to pursue a higher education in Food and Wine. Spending over 4 years working and studying at the Wine Spectator Greystone Restaurant at the Culinary Institute of Americas Greystone campus, I transferred to the CIA Hyde Park and graduated in 2004 with my AOS in Culinary Arts. In 2012, I opened Calistoga Olive Oil Company and began the journey of making olive oil for a living. Today I use the expertise I have learned over the years to produce and source amazing culinary ingredients and make them available for your everyday use to help bring joy to your table.
Over the past years as owner of olive oil companies I have done the research and development in many culinary products ranging from producing and sourcing the highest quality olive oil, researching and sourcing aged wine vinegar's, culinary salts and our famous salted almonds.
